About the Show
Food Safari takes you on a culinary globetrot across Australia. Producer, presenter Maeve O'Meara, has spent most of her life seeking out great food, recipes and the clever people who make simple ingredients sing. Her access-all-areas camaraderie with everyone from three-hat chefs to passionate home-cooks results in a series that feeds food enthusiasts’ desire for insider knowledge.

About the Team
Maeve has worked as Food Editor on major Australian magazines and can be heard regularly on radio talking about her favourite subject. Nine years ago she created a successful food adventure company Gourmet Safaris which runs a range of tours in Sydney, Australia and overseas. The idea for the Food Safari television show was based on hearing the many questions being asked on her safaris - what ingredients to buy and how to cook with them. Making the series and filming many close friends, across many nationalities has been the realisation of a dream.

Series producer and director, Toufic Charabati is an award winning producer and editor. He's worked at SBS, Channel Nine and ABC TV. He spent 3 years as series producer of the acclaimed The Food Lovers’ Guide to Australia, producing two series. Series Four won the World Food Media Awards Gold Ladle for Best Food TV Program (Long Form) in 2005. Other programs Toufic has worked on include Fork in the Road and Pizza, both for SBS. He holds an Arts degree, studied cinematography, and has won awards for his work in documentaries and current affairs.

Hot Tips

Bubble and Squeak

Incorporate cold leftover vegetables from a previous meal (traditionally the Sunday roast) into bubble and squeak. Chop vegetables (and cold chopped meat if you have it) and combine with mashed potato. Fry the fritters until the mixture is well-cooked and brown on the sides.

 

Glossary

Fattoush

A Lebanese summer salad also known as the "queen of salads", combining fresh summer vegetables, dressed with lemon juice, olive oil and sumac spice and garnished with baked or fried pieces of Lebanese bread.
