A NSW pedophile who forced a young boy to perform a sex act with a calf has begun a seven-year jail term after collapsing in court during his sentencing.

Allan Kenneth Brookes, 56, used his age and position of authority to groom the boy and commit multiple indecent and sexual assaults on him over two years in rural NSW.

On one occasion, Brookes forced the boy to watch while he had sex with a cow and in a separate incident he made his victim commit a sex act with a calf in a feeding pen.

Brookes fell to the floor of the NSW District Court as details of his offending were read out by Judge Chris Craigie on Monday afternoon.

His crimes were labelled as an "appalling catalogue of protracted offending".
