A man has been seriously burned in a fire on Sydney's lower north shore, according to police, who say they responded to reports of an explosion.

Emergency services were called to reports of a fire in a coffee shop on Waters Road in Neutral Bay after 5am on Sunday.

A man was taken to Royal North Shore Hospital, where he remains in a critical but stable condition.

He suffered severe burns to his legs, arms, hands, stomach and face.

Reports suggest the man was caught in the explosion and thrown into the middle of the road as the blast gutted the shop.

Emergency services are investigating how the blaze started.
