A few weeks ago, the Michelin guide to the Nordic region was published in a new edition, and more Michelin-stars were distributed to Danish restaurants than ever before. Copenhagen got its first three-star restaurant, and among other things, there was a small inn at Denmark's west coast, Henne Kirkeby Kro, which also received one of the coveted Michelin stars.
Henne's star-chef is Paul Cunningham - and he has now been invited to Australia to join the Melbourne Food And Wine Festival. We met him at Denmark House in Melbourne Tuesday, 8 March 2016.
Paul is originally from England. For ten years he looked after his Michelin-starred restaurant in Tivoli - The Paul - and then, five years ago, he moved to the countryside and started a vegetable garden, which has now given him stardom once again.
Paul Cunningham has 24,000 fans on Instagram, where you can follow him in what he's up to and gets enthusiastic by. In Melbourne, there has been a full house for his festival events where people gladly pay an entrance fee of 60 bucks to hear him talk for an hour about food and about the Danes.
