Pinoy favourites: Mango Sago

It's mango season in Australia!

Here's a familiar Pinoy dessert that puts the sweetness of ripe mango in the forefront, complemented by the creaminess of coconut milk, the chewiness of tapioca pearls and the gritty crispness of rice bubbles.

Ingredients:

1 can coconut milk

1 can condensed milk

Tapioca pearls

White sugar to taste
 
Fresh (or frozen) ripe mangoes cubes and rice bubbles for topping
 
Procedure:
1. Boil the tapioca pearls for 20 minutes. Turn off the fire and leave tapioca pearls in water to cook further. Remove when done.

2. Heat coconut milk, condensed milk and sugar together, and stir. Allow to cool a bit.

3. Place tapioca pearl mixture into desired containers. Top with mangoes and rice bubbles.

4. Serve immediately.
