Stafili Glyko – Grape spoon sweet
Ingredients
1 kg seedless grapes
2 cups sugar
2 cups water
½ cup lemon juice
4 geranium leaves (lemon or rose scented)
Method
Wash and remove grapes from stems. Drain.
In a clean saucepan, add the sugar, lemon juice, geranium leaves and 2 cups of water. Boil and stir until the sugar dissolves. Add the grapes and bring to the boil again. Simmer until the grapes collapse and the skins loosen (about 10 minutes).
Remove the grapes using a slotted spoon and set aside till needed.
Continue to simmer the syrup for about 20 minutes. Add the juices from the bowl and continue to simmer until setting point is reached (about 20 minutes). To test for setting point, either use a confectionery thermometer (105oC) or drip some syrup onto a cool plate and look for the droplet holding its shape.
Add the grapes and simmer, while stirring from time to time, until it reaches setting point again (about 20 minutes). Remove from heat, let cool and place in sterilised jars. Once opened, the spoon sweet should be stored in the fridge.
