Recipe: Noni Sachdeva
Ingredients
Besan (chickpea flour) – ½ cup
Rice Flour – 2tbl
Ajwayne/ Carom Seeds – ¼ tsp
Turmeric powder – ¼ tsp
Finely chopped coriander leaves – ¼ cup
Onion thinly sliced – 1 cup
Red chilli powder – 1tsp
Coriander powder – ½ tsp
Salt ½ tbl /to taste
Water - as needed
Serve with……
Tomato sauce
Green chatni
Method
Cut the onions into thin slices.
Take a mixing bowl, add besan, rice flour,, ajwain, turmeric, fresh coriander, red chilli powder, coriander powder and salt.
Mix all the dry ingredients.
Slowly add water to this mixture and make a thick consistency.
Add the onion, mix and set aside for frying.
Heat oil for deep-frying.
Once the oil is hot, add small quantity of the battered onion into the oil and fry until crispy, golden brown.
Kanda Bhaji is ready to serve.
Enjoy it with green chutney, tomato sauce and may be some masala tea.
