Kimitaka Azuma, the owner chef of the high-end Japanese restaurant Azuma in Sydney, recreated some dishes he cooked for the royal banquet in 2002 for the Crown Prince of Japan and his wife Princess Masako.

Kimitaka Azuma, the owner chef of the high-end Japanese restaurant Azuma in Sydney, recreated some dishes he cooked for the royal banquet in 2002 for the Crown Prince of Japan and his wife Princess Masako.

The restaurant Azuma is now offering a special 8 course dinner called Harmony Menu, which was named to celebrate the new era Reiwa which means "beautiful harmony".  This menu is available only in May.

Four of the eight dishes are the recreation of the menu served for the royal dinner during the official Australian visit by the Crown Prince of Japan (now the new emperor) and his wife Princess Masako.

In the audio, Kimitaka shares his experience of preparing the royal dinner in 2002 and explains to us his cooking style, the never-ending pursuit for perfection.
