Young-min Lee emphasised that chefs need to focus on basics and offer dishes that also suit their taste.
With 25 years as a chef, Lee asked young Korean chefs working overseas like Australia, to present a dish that integrates a flavour of foreign and Korean culture.
Lees goal is to establish a culinary academy, either for those who wish to learn Western or Korean cuisine, to give back to the next generation, as he earned from his seniors.
