Recipes for New Year's Eve Dinner

Melbourne based Turkish chef Murat Ovaz shared the recipes with our audience for New Year's Eve family dinner. Here it is the recipes for Lakerda and Roast Chicken.

LAKERDA

For 4 people

1/2 kg king fish fillet

Curing

150 gr salt

150gr sugar

1 tbs cumin salt

½ bunch thyme

1 lemon zest

30 ml raki

1 star anised

Method

Mix all ingredient in large bowl,

Put your fish on tray skin side down, cover your fish with your curing mix and cover it, 2 hours later take your fish out and wash your fish lightly and dry  and  portion 0.5 cm.

Garnish

Chilli very finely slice

Pickled pear or sea grape

Salmon roe

Dill

ROAST CHICKEN

1 whole chicken

1/3orange juice

2 tbs butter

1 teaspoon salt

Freshly ground black pepper

3 garlic cloves

2 oranges

For pilav:

3 onions

1 teaspoon sugar

2 tbs butter

1 tbs olive oil

1 cup of tea currants

50 g crusty raw almonds

1 tablespoon peanuts

Salt, freshly ground black pepper,

3 cups of rice

2 cups of turkey water

2.5 cup hot water

Method:

Place the chicken in a large heat-resistant oven tray. For the sauce, mix the orange juice, 2 tablespoons of softened butter at room temperature, salt, crushed garlic, freshly ground black pepper. Rub this mixture with your hands all over the chicken. Wash the orange and dry it well, then chop and place it on the inside of the chicken. Preheat 190 degrees oven, cook for half an hour.

At the end of half an hour, pour one liter of hot water on the side of the chicken with the scoop on each side. Soak the chicken thoroughly and cover with water-tightened grease and a heat-resistant foil. Reduce the temperature of the oven to 160 degrees and cook for 30 minutes. Separate the 2 cups of water accumulated in the tray for use in making rice.

For pilav, mix Rice with 1 teaspoon salt and 1 teaspoon lemon juice added to warm water and keep it wait in half an hour. Then wash and drain under running water. Soak the zante currant in warm water. Peel the onion and chop the dice. Heat olive oil and butter in a rice pot and sauté the onions, sugar, almonds and peanuts. Add the rice. Roast on low heat for 10 minutes with continuous stirring. Add zante currant, salt, black pepper and allspice. Add the turkey broth with hot meat broth for a few minutes. On high heat, close the lid of the pan and boil the fire thoroughly after boiling several carbs. Cook the rice water until it has drawn. Remove from the stove, 10 minutes without opening the cover.

In the meantime, cut the garnish as desired or leave it as a whole and mix with olive oil, salt and pepper. Release on greaseproof paper. Preheat in 200 degrees oven, cook for 20 minutes. Take the chicken to a large serving dish, fill the inside pilav if desired or place it on the sides of the serving dish.
