Carrusca, a product of the Estudiantes academy in Argentina, has scored 16 goals and set up countless more in his 63 appearances for the Reds.
The 28 year-old, who had a stint at Turkish giant Galatasaray before joining the A-League club in 2012, was an integral part of the Reds' inaugural FFA Cup winning side in December 2014 and was selected by fans to play in the A-League All Stars squad when it faced Italian giant, Juventus, last August.
"I am so happy to renew my contract for two more seasons," Carrusca said.
"I've re-signed because I've wanted, since I arrived here, to always stay at this club for many years. I will do my best for the team like I try to do every single training and every single game, so now I can fully concentrate and focus on (the rest of) our games.
"One of the reasons (for re-signing) was because of my teammates. Most of the players have signed also and we have to keep this group (together) if we want to be successful in this league. Another reason is because I love the style that we play and Josep is another big part in my decision.
"I love this club and my family is happy here, also. The environment at every training session, the lifestyle in Adelaide – everything is fantastic and everything is going well.
"As a group we have many objectives, we want to make the finals, be in the top three, then win the championship. I know it is very difficult because it's a tough league, but I believe in this team and we can be very successful."
Carrusca's signature caps a busy contract period for Adelaide, which announced the re-signing of Isaias on Thursday, and Cirio, Bruce Djite and Michael Marrone earlier in the month.
"All of the club is happy to have re-signed Chelo and to have him with us for two more years because it's a very good extension," Adelaide United coach Gombau said.
"He's a player that everybody knows for his high quality and for what he has brought to our games. To have him here with us for two more years is a luxury and I'm sure we'll all continue to enjoy his football.
"This shows how close the group is. We have a good group of players and they are committed to the club and everybody wants to be here. Our future looks good and we'll work step-by-step to become a bigger club in the Hyundai A-League."
