Caleb Ewan (Lotto-Soudal) looked set to challenge Demare in the final sprint into the city of Valencia, but the Frenchman proved too strong as the Aussie was forced to settle for sixth place.
Fellow Aussie Miles Scotson (Groupama-FDJ) who won his first international stage earlier in the event, came in 2 minutes and 26 seconds behind Kung to finish in eighth overall.
Swiss rider Kung snatched the yellow jersey with a blistering time trial in Stage 4, and didn't let it go in the final to claim top spot on the podium, joined by Nelson Oliveira in second and Enric Mas in third (both Movistar).
