A trading port for the Portuguese, British and Dutch, Nigeria is home to African cuisine with a subtle European twist. Situated in the tropics, the nation is home to a colourful bounty of fruits, including mangoes, grapefruit, pineapples and limes. Rice is a staple ingredient in many meals, including beef and vegetable stew, Nigerian fried rice and the always popular jollof rice with chicken. Cassava and yam are also commonly used ingredients. For Nigerian party food, we recommend  these beef hand pies and shuku shuku (coconut milk caramel balls).
