Our evolving sense of TASTE

We all know about taste. Out of our five senses, it seems like one of the simplest. Its intuitive. Yet, we know less about our sense of 'taste' than we know about 'sight' and 'hearing' - which are arguably more complex. Why is something so basic to everyday life - so complicated and controversial?
