Good bread: crispy on the outside, elastic on the inside

In Germany, large chains with many branches are now behind many bakeries. You often have to search a long time to find a baker who bakes by hand. Max Stiebling from the Thuringian Forest was so annoyed by this that he gave up his job in a large bakery and started his own business in his early 30s.
