Christmas menu first course: Iced mulled wine

Christmas dinner is saved! Together with Christian Oblak from Gasthaus on Queen, every Tuesday up until Christmas, we will be presenting a course from his Christmas menu. With helpful tricks and insider tips from the Austrian chef. Today: Iced Mulled Wine.


Instructions

1 litre of red wine

5 cardamom pods

8 cloves

5 allspice seeds

8 coriander seeds

4 star anise

1 teaspoon whole aniseed or fennel

1 whole orange (organic or well washed)

3 sticks of cinnamon

10 tablespoons sugar

1 dash of rum

You can also simply use a ready-made spice mix.

Simmer everything together. If you like it sweeter, add more sugar. Leave to cool, serve on ice and enjoy.
