Mediterranean Baked Fish Recipe

A healthy way to prepare fish all year round! Chef Angela Nicolettou gives us a recipe for 'plaki' or baked fish.


Ingredients

1 kg fish steaks (swordfish, tuna, snapper or other firm fleshed fish)

2 red onions, sliced

4 cloves garlic, chopped

1 tbs dried oregano

½ cup white wine

100g kalamata olives

1 tbs capers (wash if salted)

½ cup dill, chopped

Extra virgin olive oil

Method

Heat oven to 180C. Arrange fish in an oiled baking dish. In a fry pan add some olive oil and cook the onions until very soft. Add the garlic, oregano, wine and season with pepper. Cook for 2 minutes.

Add the olives, capers and dill and pour mixture over the fish. Bake until cooked (about 15 - 20 minutes).

Serve warm with horta (wild greens) or a green salad.
