Easy to make: Kanda Bhaji

Kanda Bhaji, crispy batter fried sliced onions, is a popular snack in Maharashtra.

Recipe: Noni Sachdeva

Ingredients

  • Besan (chickpea flour) – ½ cup
  • Rice Flour – 2tbsp
  • Ajwain/ Carom Seeds – ¼ tsp
  • Turmeric powder – ¼ tsp
  • Finely chopped coriander leaves – ¼ cup
  • Onion thinly sliced – 1 cup
  • Red chilli powder – 1tsp
  • Coriander powder – ½ tsp
  • Salt ½ tbsp /to taste
  • Water - as needed
Serve with -

  • Tomato sauce
  • Green chutney

Method

  • Cut the onions into thin slices.
  • Take a mixing bowl, add besan, rice flour,, ajwain, turmeric, fresh coriander, red chilli powder, coriander powder and salt.
  • Mix all the dry ingredients.
  • Slowly add water to this mixture and make a thick consistency.
  • Add the onion, mix and set aside for frying.
  • Heat oil for deep-frying.
  • Once the oil is hot, add small quantity of the battered onion into the oil and fry until crispy, golden brown.
  • Kanda Bhaji is ready to serve.
  • Enjoy it with green chutney, tomato sauce and may be some masala tea.
