Recipe: Noni Sachdeva
Ingredients
- Besan (chickpea flour) – ½ cup
- Rice Flour – 2tbsp
- Ajwain/ Carom Seeds – ¼ tsp
- Turmeric powder – ¼ tsp
- Finely chopped coriander leaves – ¼ cup
- Onion thinly sliced – 1 cup
- Red chilli powder – 1tsp
- Coriander powder – ½ tsp
- Salt ½ tbsp /to taste
- Water - as needed
Serve with -
- Tomato sauce
- Green chutney
Method
- Cut the onions into thin slices.
- Take a mixing bowl, add besan, rice flour,, ajwain, turmeric, fresh coriander, red chilli powder, coriander powder and salt.
- Mix all the dry ingredients.
- Slowly add water to this mixture and make a thick consistency.
- Add the onion, mix and set aside for frying.
- Heat oil for deep-frying.
- Once the oil is hot, add small quantity of the battered onion into the oil and fry until crispy, golden brown.
- Kanda Bhaji is ready to serve.
- Enjoy it with green chutney, tomato sauce and may be some masala tea.
