Ingredients
Brownie mix
2 eggs at room temperature
1 cup sugar
1 tsp. vanilla extract
½ cup melted unsalted butter -- cooled down
½ cup unsweetened cocoa --sifted
½ cup flour -- sifted
¼ tsp salt
Ice Cream Mix
1 cup vanilla Ice Cream
½ crunchy chocolate
Berries
½ cup Strawberries (sliced)
¼ cup Blueberries (crushed)
5-10 blueberries whole
Garnishing
1tbsp pistachios (crushed)
Method
Heat oven to 175 degrees C and prep a square brownie pan by spraying oil on the pan then line it with baking papers.
Mix the sifted flour, cocoa and salt in a bowl.
Take another bowl combine room temp butter, oil, and sugar.
Mix well.
Now add and vanilla extract mix again until the mixture is lighter in colour.
Now add the flour and cocoa and mix (slowly).
Pour the batter into the pan and place it in the oven.
Bake for 25 to 35 minutes, until an inserted toothpick comes out clean.
Remove from the oven and cool down completely.
Once the brownies are completely cooled, crumble it and keep it ready to serve.
Take crushed crunchy chocolate.
Add this crushed kit kat into vanilla ice cream.
Mix and set it back in the freezer for approximately half hour.
Take a glass add the crumbled brownie, then place some strawberries on the edges of the glass.
Add 3-4 blueberries.
Place a scoop of ice cream on the berries.
Pore the crushed berries on top of the ice cream.
Lastly sprinkle some crushed pistachios and serve.
