Indonesian chefs serve Indonesian dishes at the 5-star hotel in Sydney

Two chefs from Surabaya, Indonesia had been serving 'Nusantara' dishes for ten days in Sydney. How to maintain the dishes' authenticity?


As part of 'Taste of Indonesia' food festival, Shangri-La Hotel in Sydney - in collaboration among others with Indonesian Consulat General in Sydney and Garuda Indonesia - flew two chefs from Indonesia. Chef Irwanto is a sous chef and Chef Rizal Nasution is a chef de partie, both from Shangri-La Hotel Surabaya. They spoke to SBS Indonesian on this matter.
