"Australia is a great place to live. But my future is abroad"

Paolo Tancredi Arlotta is a 33 year-old chef passionate about yoga. He moved to Melbourne 6 years ago and recently became an Australian citizen. This is his story.

Born in Piedmont with a mix Italian background, Paolo worked in restaurants all over the world - from Copenhagen to Singapore - before moving to Australia. Now he calls Melbourne home, but with his new homeland he has a love-hate relationship.
"People here are well mannered. There's enough job for everyone. Money is always available. But if I had children, I'd like to raise them elsewhere"
Since he moved to Victoria, Paolo avoided accurately the Italian community, including Italian-run restaurants. Now, as he recently gained the Australian citizenship, he's starting his own pop up dinner business. Besides his own food studio, he's also working at a book to teach fellow chef how to apply yoga principles in a busy kitchen.
