Gualtiero Marchesi, the father of Italian new cuisine remembered

Alessandro Pavoni, now a renowned chef in Australia, remembers his great master Gualtiero Marchesi who passed away on Tuesday.


Alessandro Pavoni was a very young chef when in 1998 worked at the restaurant of Gualtiero Marchesi, the pioneer of Italy’s new cuisine and the first Italian chef to be awarded three Michelin stars. Pavoni says Marchesi was like a father encouraging him to explore new techniques and ideas that have made him the great chef he is today.
