“I want to showcase how Australia gives us so many great different foods. Each state has different produce and we should be celebrating all of it.” - Nornie Bero; chef and owner of Mabu Mabu
Mabu Mabu is an Indigenous owned business with an ambition to showcase the breadth and variety of Indigenous cuisine.
Nornie Bero, Mabu Mabu chef and owner, says the company sources its foods and ingredients from small growers in Victoria as well as Indigenous organisations from all over Australia that stock their range of produce. All their products are not only locally sourced but they also come from ethical producers.

The venture started as a café in Yarraville and they recently opened their second venue, a flagship restaurant and bar at Melbourne’s Federation Square where guests are greeted to a Big Esso sign.
Nornie Bero explains that Mabu Mabu is an expression in her language akin to saying bon appetit in French. Whereas Big Esso means big thank you.
“We wanted to thank everybody that helped us along the way and this beautiful country that has given us so much,” Nornie Bero said.
