Iodine is an essential microelement for humans. The average adult contains between 20 and 50 milligrams of iodine. About 60% of iodine is found in the thyroid gland located at the base of the neck. The rest of iodine is found in thyroid hormones in the blood, ovary and muscles. Distribution of iodine in the world varies widely, so food that grows in areas with low iodine concentration does not contain enough of this micronutrient. These areas are located in Central America, parts of China, continental Europe, Russia and South America.
