A life-size Alice in Wonderland cake and hundreds of kilos of fondant are set to draw sweet-tooths to the inaugural Australian International Cake Festival.
The festival will feature competitions and masterclasses involving both Australian and international bakers in Brisbane from Friday.
Sugar artist Zoe Byres, the co-creator of the Alice in Wonderland cake, said it took almost three weeks to build.
"We've estimated that we have used about 130kg of fondant in this display, and it has taken between 350 to 400 hours building between five of us," Ms Byres said.
"Everything you see is edible."
More than a hundred "statement" cakes have been flown in from around the world for judging.
Festival spokeswoman Jane Balkin said cake artists have gone to huge lengths to ensure their cakes arrive in one piece.
"Some chose to send their cake by freight, but some go to the trouble of purchasing an airline seat next to them especially for their cake," Ms Balkin said.
Among biggest pieces will be a six-by-three metre wedding cake designed by Scottish baker Paul Bradford, who has previously baked for Queen Elizabeth.
