Sydney's association with rum is about to enter an intoxicating new phase.
More than 200 years after the Rum Rebellion, plans have emerged to build a rum distillery in the harbour city.
Online platform Primary Markets is conducting a $25 million capital raising for Sydney Rum Distillery, which wants to open the world's most advanced rum distillery in 2019.
The spirit was used as currency in the fledgling colony and later banned.
Sydney Rum Distillery managing director Chris Middleton said the company had identified potential sites and equipment to purchase.
"Our goal is to create exciting, modern brands to market premium Australian rum to a fast growing international consumer," he said.
"We are seeking like-minded investors to realise this ambition."
Primary Markets is seeking capital from sophisticated and institutional investors for the state-of-the-art facility.
Mr Middleton, who previously worked as a brand director at Jack Daniels, said Sydney Rum Distillery was forming a research and development partnership with a university and working on a plan to distribute the rum to international markets.
"Sydney Rum Distillery will be the most advanced and versatile distillery in the world using new all-natural research and development processes to produce rums of extraordinary new sensory standards," he said.
Rum has been an overlooked and under-developed spirit category, he said.
It is Australia's third largest spirits category and the second largest in the world.
