Spread the word - it's Vegemite ice cream

Let's toast Australia with a dark twist on a summer treat, says a Canberra food innovator.

When John Marshall heard Vegemite was returning to Australian hands he had an epiphany.

Why not make a Vegemite ice cream for Australia Day?

Mr Marshall's Frugii Dessert Laboratory in Canberra will offer the unique flavour on Australia Day.

"It's one of those tastes that if you ease back on it, it's like an interesting salted caramel flavour," he told AAP.

Mr Marshall's been making ice cream from his own bases, extracts, pastes, powders, freeze-dried products and chocolate for well over a decade but the Frugii Lab has only been open for the past two years.

When Bega Cheese announced it was buying back Vegemite from US food giant Mondelez he was overjoyed.

"I was quite happy to see something very Australian back in Australian hands - I think that's a good move," he said.

Mr Marshall said while some people would respond positively he was quite prepared for others to dislike the flavour.

"I want people to be able to go 'Wow, that is actually nice', but some people will say 'No, that just belongs on toast'."
