Guilty as charged – I love eating raw cookie dough. Gingerbread is a particular favourite of mine and, come Christmas time, I usually only manage to turn half the dough into baked treats, while the rest gets eaten, sliver by sliver, straight from the fridge or freezer. So, you can imagine how thrilled I was when our food editor, Phoebe Wood, came up with the idea of gingerbread cookie dough ice-cream as part of our festive desserts feature. We wanted to create show-stopping desserts that put a new spin on traditional festive flavours, and the gingerbread dough ice-cream sandwiches (dipped in a crush of praline) is just the start.
