Summer screams fruit salad and we couldn't possibly go past this Indonesian creation. The special spice is in the sauce, which is made from palm sugar, chilli, sweet soy and lemon juice.

Roasted tomato salsa

Hawaii's “po-kay” is similar to Spanish ceviche or Italian crudo — it's delicious raw fish! Paired it with rice, garnished with fresh cucumber and avocado slices and eaten by the bowl-full, this one definitely ticks the ‘healthy’ box!

Beetroot, apple and goat's cheese wraps

These are perfect lunchtime, picnic or on-the-go wraps. No cutlery is needed and use raw beetroot here, not only will it look spectacular but there's something heavenly about its marriage with goat's cheese and walnuts.

Take this recipe for what it is: a slab of good ol' strawberries and cream. It's quick to prepare (all in the freezing really!) and contains no added sugar. We give this gluten-free winner Super Cool status.
