The Moorish occupation of Spain lasted for close to 800 years, leaving behind an extraordinarily rich and complex cuisine, the likes of which had never before been seen in Europe. In these two special episodes, produced by Essential Media and Entertainment, Shane Delia takes us through his favourite moments from his trip through Morocco and Southern Spain. It was here that the ancient spice routes of Asia, collided with discoveries brought back from the New World, resulting in the birth of modern cuisine. Having sought out the tastiest and most exotic dishes, Shane will then attempt to re-invent them to serve in his own restaurant.

Shane Delia travels through Andalucía, Spain, reliving his favourite moments and meals from his spice journey through this amazing region. With a prawn ajo blanco to start, a rich sugarcane-glazed rib to excite, Shane also showcases the flavours of Spain and the passion of flamenco with his chiptole chocolate fondant that is guaranteed to tick all the boxes!
