There's a rice pudding boom! People are getting rice-happy with their pudding and they aren't afraid to share it.
The UK is all over it...
The US, too has already been concocting some serious rice pudding madness - think fried rice pudding balls, rice pudding buns and a rice pudding burrito. (Whoa!)
Oz is getting creative and also having a play...
With #ricepudding looking so delectable, it's officially rice-pudding-o'clock! For breakfast, lunch, dinner and even the elusive midnight munch, we're jumping on this rice-y comeback tour with some of our favourite recipes.
For those wanting a vibrant and playful pudding, these should do the trick...
1. Mexican almond and rice milk panna cotta with braised apricots
Horchata! It certainly looks the part and that's because it is. Soak your rice, blend with spice and serve over ice, horchata!

2. Caramel and orange blossom rice cakes
Not what you would normally expect when you think 'rice pudding,' but this is French baker Jean Michel Raynaud's take on the classic, combining caramel and orange - that means rich and zesty!

3. Chocolate rice pudding
For when you need a sweet brekkie hit, Phoebe Wood gives us a typically Filipino-style breakfast bowl that uses cocoa AND dark chocolate. Don't forget to drizzle that condensed milk and have your spoons at the ready!

4. Coconut rice pudding with lemongrass curd
This Asian-style pud is all about texture and spice and is such a refreshing way to top up your rice. Rachel Khoo gives us this dairy-free and gluten-free flavour sensation with lemongrass curd, lychee and a pop of chilli to serve.

Traditional, with a twist
5. Rice pudding with rhubarb, pistachio and marscapone
Our seasonal cook, O Tama Carey got colourful with rhubarb and created this Italian-style rice; with sweet additions of marsala and vanilla bean, this pudding pops.

6. Rice milk pots with raw cacao chocolate sauce
Belén Vázquez Amaro recreates her grandma's arroz con leche. With maple syrup, cacao powder and coconut oil all thrown into the mix this vegan dream is perfect for those chilly days.

7. Cinnamon and rosewater rice pudding with pomegranate syrup
Get a little more romantic with your rice with this cinnamon-spiked version. Vibrant pomegranate, sweet rosewater and of course scattered rose petals - ooh la la!

8. Black sticky rice creams
Every mouthful of this sticky custard takes you to Vietnam. With flavours of coconut, pandan and palm sugar, this one from Kirsten Jenkins is a rice porridge for those who love to travel through their food.

And we are yet to sample, but looks like cauliflower rice pudding is also on board, what do you think?
