Thorpe Farm produces the award-winning Tasmanian Highland Cheese range of legendary goat and sheep milk cheeses available at quality restaurants and food stores across Australia. Tasmanian Highland Cheese range includes marinated fetta, fresh goat cheeses, white mould goat cheeses, unique goat crottins, goat cheese curd and extends to the renowned range of sheep and cows' milk blue cheeses. During the days of those early barrels maturing quietly in bond storage Lark Distillery was encouraged to explore the production of other unique Tasmanian spirits from the wonderful bounty that Tasmania has to offer. The French black truffle is the fruiting body of the fungus Tuber melanosporum. This fungus forms a symbiotic relationship with the roots of oak and hazel trees. The edible portion, or truffle, is harvested in winter once it has matured.  The use of the French black truffle is limited only by the imagination of the chef. It is used as a flavouring (similar to a herb) in a multitude of dishes such as, veal, soup, fish, shellfish, game, rice and salads.

Truffle season is from late June to early September. During the harvest period Perigord Truffles of Tasmania supply truffles direct to individuals to enjoy in their homes through Australia Post Express Post Service.   The truffles are delivered within 24 hours of harvest to most Australian towns and cities.
