Whether you're after an express snack (tortilla toaster pockets!) or a hearty meal, a flatbread can be a delicious answer. Here are a brace of great ideas, some of them using store-bought breads and others where you can have fun making your own flatbreads.
Breakfast flatbreads with jalapeno hot sauce
A quick flour, yoghurt and baking powder dough forms the base of these bacon and egg-topped flatbreads. Drizzle with homemade green hot sauce for a breakfast that will wake up the taste buds.

Tortilla toaster snack pockets
It's quick, easy and the filling options are almost endless (cheese is highly recommended)! Tortillas or wraps are folding into a snack pocket, safely encasing the filling so it doesn't leak. Pop it into the toaster and in minutes you'll have a 'toaster-dilla', aka a warm, delicious snack or lunch.

Charcoal-infused flatbread (hawawshi)
Channel the streets of Egypt with this spiced mince flatbread. While locals line up to buy this popular street food, you can make your own version, no line required, using store-bought wholemeal flatbreads.

Curried potato and carrot with flatbread
Here, you can use whatever flatbreads you fancy to serve with this fresh and delicious vegetarian meal. Simon Toohey says its a favourite breakfast, though we reckon it would be great for any meal of the day.

Lamb mince flatbreads with zhoug and pickled slaw
This vibrant flatbread recipes comes from Donal Skehan, shared in Donal's Real Time Recipes. "This recipe is inspired by a recent trip to Turkey, where I fell in love with lahmacun [see below], which is that wonderful Turkish flatbread pizza," he says. His recipe uses purchased flatbreads for a quicker meal that's full of flavour, with spiced mince, crunchy veg and a punchy, herby sauce.

A Turkish favourite, this oval-shaped flatbread with spicy lamb or beef mince is often topped with salad or pickles and lemon juice, then rolled up and eaten on the go.

Tortilla hand pies
Donna Hay's recipe uses tortillas instead of pastry for these little baked pies, filled with pumpkin, broccoli, cauliflower and cheese (there's also tips for a chicken variation).

Pita with passata, pecorino and egg (pane frattau)
In Sardinia, this casual stack of flatbreads, tomato sauce and cheese is known as pane frattau and is a fantastic way to make use of bits and pieces of Sardinia’s famous flatbread – pane carasau. You can also use other thin flatbreads, or pita breads torn in half.

Spanish tortilla pies
These clever pies use sorj (thin flatbread wraps) instead of pastry, and can be made a day ahead of serving.

Lavasa masala tchot (flatbreads stuffed with split pea mash and chutney)
Lavasa masala, also known as masala tchot, is a Kashmiri street-food wrap, filled with cooked yellow split peas and spicy chutney.

Fatteh
A Middle Eastern favourite, fatteh involves chickpeas, flatbread and a yoghurt sauce. There are endless variations: try lamb fatteh (pictured below), eggplant fatteh, or a chickpea fatteh garnished with nuts and pomegranate.

If you love a thin, crisp pizza then Germany's 'flame cake' is for you. This recipe tops store-bought flatbreads with bacon, cream cheese onion and nutmeg.

Gluten-free mozzarella-stuffed flatbreads
These airfryer cheese-stuffed flatbreads are the perfect meal component. Stuff them with meatballs or falafels, or serve alongside curries or stews.

Baked enchiladas
Easy cheesy comfort food? Yes, please! Tortillas are wrapped around shredded poached chicken, nested in a baking dish and covered with a chilli-tomato sauce, cream and cheese.
