Batzina is a crustless pie originating from Epirus and Thessaly in Northern Greece. Helen Tzouganatos explains that Greeks refer to it as the 'lazy pie' because you don't need to worry about prepping the dough – it can be thrown together quickly and easily. The grated zucchini, creamy feta and eggs make the pie incredibly moist, with the dill and mint adding freshness and flavour.

Arepas with chicken salad (arepas reina pepiada)
Arepas are a round cornbread, and usually gluten-free, and in this Venezuelan recipe, homemade arepa are stuffed with a chicken, avocado and capsicum salad (or for a simple sweet version, try topping with butter and jam).

Helen Tzougantaso says no-one would ever guess this is gluten free. "It has a light, fluffy texture and tastes almost like a cross between a sponge cake and a tiramisu."

This fudge-like sweet made with chickpea flour and ghee is traditionally made during Diwali in western Indian states such as Gujarat. Usually served as prasad (a devotional offering of food), the name translates into a 'dish for God'. Safe to say, it tastes divine!
