Middle Eastern lamb tray bake
A colourful mix of veg go in the oven, with lamb chops added on top part-way through the cooking time, to create a full-of-flavour dinner. Perfect with an easy yoghurt-tahini-lemon dressing to dollop on for serving!

Get-your-veggies-in sausage bake
Sausages, garlic, zucchini, pumpkin, sweet potato, butter beans and cherry tomatoes come together in this colourful bake, which is finished by tossing the baked mix with goat's cheese and baby spinach leaves.

Curried chicken casserole
Another fantastic recipe from Mary Berg, this one with a dish-saving way of cooking the couscous. After marinated chicken and paneer pieces are baked along with tomato, onion and capsicum, the chicken is removed and set aside to rest. Chicken stock and couscous are added to the baking tray and stirred into the vegetable and paneer mixture. Five or so minutes later, you have fluffy couscous. Pop the chicken back on top and dinner is ready to serve!

Tiger prawn bake with olives, tomato and breadcrumbs
If you've got time to make the breadcrumb topping, it really adds a great finishing touch to this Mediterranean tray bake from Silvia Colloca.
