Juicy and crispy pulled lamb combines with a smoky and smooth chipotle pepper creama, and a popping avocado and corn salsa for a well-rounded taco.

Take a trip back to the ancient Mesoamerican cuisine (with the addition of kombu to the turtle beans to bring out the meaty umami flavour of them) with these bean tacos. A corn tortilla is the best pairing for some extra brightness in flavour.

Pico de gallo is a simple salsa of tomatoes, onions and coriander that appears on just about every dinner table and condiment station in Mexico. This one has a little lime juice and spring onions added to it, for some extra zing to balance out the earthy, spice-marinated kangaroo.

This spice-rubbed beef may have a long list of ingredients, but they’re ones you can easily source at your local grocer, like ground cumin and dried oregano. A long slow cook gives the spices a chance to develop and makes the beef fall-apart tender.

Flex your nose-to-tail skills by preparing some beef tongue tacos. Beef tongue has a rich steak-like flavour, and is poaching for an hour before being fried, leaving you with a meaty broth you can add to soups and stews.

In a cuisine known for its long list of ingredients - with mole sauces featuring up to 40 - this recipe only requires five. Tomatoes cooked until they're jammy, then added to a fry-up of bacon, beef, onion, jalapeno and garlic. You'll need good-quality beef sirloin or tenderloin, as you're going to be just searing it for a few minutes.

Puffy tacos are a fun change on regular soft tortillas, and add a deliciously rich and buttery angle. To make them, you prepare a dough with masa harina flour, then fry the dough until crisp and golden. They're a great option for entertaining, as the taco shells can be made ahead of time and stored in an air-tight container.
