An ode to Catherine O’Hara: 9 comforting recipes to fold in the cheese

Few moments in television history have captured culinary confusion quite like Catherine O’Hara’s Moira Rose demanding that her son simply “fold in the cheese”. Vague. Imperious. Completely unhelpful. And somehow, utterly perfect.

In honour of Catherine O’Hara’s singular comic genius — and the way that Schitt's Creek cheese scene became shorthand for every recipe instruction that assumes you already know what you’re doing — here are nine SBS Food recipes where cheese isn’t just included, but embraced, layered, melted and (yes) folded in.

This is where it all began. Enchiladas that ask you to do more than gesture vaguely at the cheese drawer. The filling is generous, the sauce forgiving, and the cheese properly worked through - no yelling required.

This list would not be complete without a mac and cheese recipe. This one from Donal Skehan does double duty: it provides cheesy comfort, and is ideal for using up whatever's in the fridge.

Soft, warm and studded with cheese, this mielie bread doesn’t overthink things. The cheese is *ahem* folded through, baked in, and exactly where you want it to be.

Icelandic fish gratin

Cream, cheese and fish come together in a way that fills you with comfort, right when you need it the most. Everything is mixed through, baked until golden and served without fuss. A reminder that good cheese work is universal.

Make over the classic sausage pasta bake with this easy, family-friendly version that transforms Italian pork sausages into juicy meatballs (with no rolling or breadcrumbs needed!). Smothered with a layer of creamy béchamel sauce and a golden bubbly cheese crust, this pasta bake is a real crowd-pleaser.

Folding in the cheese, royally. ‘Queen’ translates as ‘Regina’ and in Neapolitan dialect the expression ‘P’a riggina’ means ‘For the Queen’ in this 100 per cent born-and-bread Neapolitan delicacy that was created in honour of Queen Maria Carolina.
