Recipes

Sweden

Potato pancakes (raggmunk)

These potato pancakes are traditionally served with pork or unsmoked bacon at Christmas.

Northern India

Spiced potatoes (aloo chaat)

If you don’t want to make the chutneys for this dish, substitute good-quality chutneys from Indian food shops. They can also be used as accompaniments to other Indian snacks such as samosas, pakoras and bhajis.

Peru

Potato salad with spicy cheese sauce (papas a la huancaina)
From the potato’s original birthplace, Peru, comes this national dish of potato salad with spiy cheese sauce.  Served cold or at room temperature, the purple sapphire potatoes are a colour-popping stand out.

Poland

Potato and cheese dumplings (ruskie pierogi)

Polish dumplings contain a variety of sweet and savoury fillings, but arguably the most popular is the 'Russian-style' filling of potato, onion and cheese.
