Pakistan 

1. Haleem

A hearty and fragrant dish of beef with grains and lentils shows slow and steady wins the race.

Malta 

2. Maltese-style bruschetta (hobż biż-żejt)

Really go the distance with the final dousing of olive oil on this bruschetta—you want to bite through the crusty ciabatta and into little pockets of olive oil. It also brings together the rest of the team: tomato pesto, pickled onions, white anchovies, olives, capers, ricotta and parsley.

Singapore 

3. Singapore wok-fried black pepper crab

Get the ball rolling with this Singaporean classic by deep-frying the crab. After that, seasonings like black peppercorns, red chillies, ginger, garlic and soy sauce all chip in to create a rich and lively crab dish that's great for entertaining.

Malaysia

4. Captain’s chicken curry (kari kapitan)

Bound to be a front-runner for your new favourite chicken dish—it starts out strong with a beautifully deep aromatic spice paste, and gets across the finish line with a little sugar for sweetness and tamarind paste for sourness.

India 

5. Prawn and coconut curry

When you're in the full swing of things in the kitchen, this softly perfumed, creamy curry is ready in just 30 minutes.

Canada 

6. Fries with gravy and cheese curds (poutine)

This classic Canadian dish pulls out all the stops: deep-fried potatoes, homemade cheese curds, and a rich gravy.

England 

7. Mary’s Cornish pasty

Buttery homemade pastry puts these beef and vegetable pasties in a league of their own.

Fiji 

8. Fijian-style sashimi of trevally

Adding coconut milk to ceviche gives all others a run for their money. There's a few other ingredients that come out of left-field to make this dish a real champ.

New Zealand 

9. Whitebait patties and minted salad

These patties are about simple tactics: no flour, just whitebait and beaten eggs. The salad is a team effort between cos lettuce, avocado, mint, and a yoghurt dressing.

South Africa 

10. Lamb kebabs (sosaties)

Give yourself a head start on these kebabs, and starting marinating the lamb a day early. From there, it's a shoo-in.

Caribbean 

11. Salt fish balls

These tasty little golden balls are found in countries throughout the Caribbean, and cover all bases for greatness: sweet, salty, savoury, fried.

Australia 

12. Lazy seafood lasagne

When you want to showcase fresh local seafood in a new way, this free-form lasagne is a solid game plan. Make your own salsa verde to go with it, and you know you've backed a winner.

Sri Lanka 

13. Pepper beef curry (kuruma iraichchi)

Punchy peppercorns, curry leaves, pandan leaves, and a bunch of other aromatics set a mean pace for this fragrant, vibrant curry.
