Vietnamese dipping sauce

For an express dipping sauce for fresh rice paper rolls, combine hoi sin sauce with some chilli sauce and peanut butter.

Rice crackers

Cook large rice crackers in the microwave. Lay them across a take away container and cook on HIGH for approximately one minute until puffed. Use as an edible serving dish for salads.

Toasting sesame seeds

After toasting they lose flavour rapidly, so be sure to toast them as close to serving time as possible.

Frozen ingredients

Many essential ingredients of the Vietnamese kitchen can be bought or stored frozen, including finely chopped lemongrass and galangal, pandan leaves, coconut juice, whole chillies, lime and lemon juice, stocks and raw taro.
