What to make when life hands you lemons

Yes, you can make gin and tonics with all those lemons life keeps hurling in your direction, or, you can keep your sobriety and turn those rinds into riches of a more delicious kind with these citrus-smacking recipes.

1. Sour no more

If you've been running around trying to dodge life's lemons, it's time to stop, face them head on and collect them to make these sweet little lemon tarts. You just cannot go wrong with their creamy, custardy centres and addictive tartness. They're enough to have you begging life to keep the lemons coming.

2. Bottle them up

Keep the influx of lemons under control with this recipe for preserved lemons. A few slivers of these guys in tagines, salads and couscous will instantly liven things up with their sharp, zesty flavour. Keep them bottled up for 12 months and you'll always have lemons on hand, even after life has stopped dolling them out.

3. The curd is the word

If you haven't heard the word about the curd, you're life is about to change. Lemon curd is one of those recipes that takes little effort but provides big, bright happiness. Slather it on toast, crumpets, pikelets, or spoon into tart shells, over ice-cream and through yoghurt - the possibilities for curd enhancement are endless.

4. Put a ring to it

Silvia Colloca doesn't duck when lemons come flying her way. Instead, she bakes them into a Bundt tin for this fluffy lemon and ricotta cake. A little kick of amaretto sloshed into the batter rounds out the tartness of the lemon, making for a gentle citrussy fragrance.

5. A time to chill

Lemons are a bit like the quietly popular kid in school who makes friends with everyone from the computer geeks to the mean girls. Lemons relate to all kinds of disparate ingredients, from cream and cheese to alcohol and meats. Here, they're getting on refreshingly well with elderflower for this sorbet.

6. Éclair allegiance

Lemon displaces the classic chocolate-and-cream combo in these sunny-yellow lemon éclairs. Full of a tangy lemon curd (which we've already heard, is the word), they're also painted with a thick lemon icing and drizzled with a candied lemon syrup – it's a triple-threat!

7. Get a wedge in

When you think of lemon groves, the quiet, dry heat of the Mediterranean comes to mind. So it makes sense that the lemons of life thrown at Italians over the years have ended up on bread. This Ligurian lemon focaccia is a deliciously rustic example of this practice.

8. Mouth-puckering pudding

No round up of our favourite lemon recipes would be complete without that good, old pud, lemon delicious. It's classic what-mama-used-to-make territory, so if you haven't enjoyed the tart spoonfuls of this classic lemon dessert in a while, it's time for a revisit.
