Katherine Sabbath used to teach high school geography, history and English, and you get the feeling hers would have been a very colourful classroom indeed. Her new cookbook Bake Australia Great is a whirlwind of colour and creativity.

Living her best bake life

She left teaching in 2015 to live the baking life and hasn't looked back. Her popular Instagram account (half-a-million followers and counting) led to her first book, the self-published pop-up art book, The Pop Edition.  Lucky for us, The Pop Edition led to Bake Australia Great.

In this riot of colour, the Vietnamese-Australian wows us with recreations of some of Australia's most famous icons. If you've ever wanted to bake The Great Barrier Reef, create a Sydney Opera House pavlova or mix up a batch of "flamin' galah" cupcakes (and, let's face it, who hasn't?), this is the book for you.

Queen of the Dessert

Sabbath's creativity and talent is stunning and original. One of the cakes featured is called the "Mining Magnate" because "it's rich". She's also given the classic Dolly Varden a little "Priscilla Queen of the Dessert" magic, using a Ken doll who looks only too happy to be there. A giant "fairy bread" cake is sure to win the hearts of kids across the country, as will redback spider cupcakes and Koala crunch pops.

We'll take 10 of these, please - recipe here.

Easy-as instructions

Thanks to her teaching past, Sabbath is also great on the easy-to-follow instructions. The cookbook is separated into three chapters that progress in difficulty. Start with Chapter One, Easy as and progress through to Chapter Three, Advance Australia Fare. Along the way you'll learn Sabbath's tips, techniques and sweet secrets to ensure you'll graduate with flying colours.
