Looking for quick, delicious weeknight meals? Justine Schofield is keen to show you how well you can eat with meals based on pantry staples and easy-to-buy ingredients.
"Obviously they're simple recipes but they're actually really healthy and tasty. You're not taking any shortcuts on what the actual result is," says the keen cook and television host, when we chat to her ahead of the start of her new show, Outback Gourmet , on SBS Food. Channel 33.
She also wants us to take the stress out of midweek meals. "At the end of the day, I want you to enjoy week cooking more and feel empowered in the kitchen. Even without busy schedules, it shouldn't be a chore and that's why this book follows my work-week mantra: work smarter, not harder," she writes in the new book. "I've collated these scrumptious and simple recipes to give you more time to savour sharing the food you prepare."
