Ingredients

Rosti
  • 350 g (12 oz) potatoes, peeled
  • 1 egg
  • ½ onion, peeled and finely chopped
  • Big handful of parsley, chopped
  • Salt and black pepper
  • Spray oil
Meatballs
  • ½ onion, peeled and finely chopped
  • 250 g (9 oz) beef mince
  • 1 egg
  • 20 g (¾ oz) breadcrumbs
  • Big handful of parsley, chopped
  • Few sprigs of thyme, leaves only
  • Salt and black pepper
  • Tomato sauce (e.g. passata or jarred pasta sauce), to serve

Instructions

  1. To make the rosti, cook the whole potatoes in a saucepan of salted boiling water for 10 minutes. They should still be a little firm. Drain and let cool, then grate the potatoes and place in a bowl. Add the egg, chopped onion and parsley and season with salt and pepper. Stir to combine, then form patties (you can use a biscuit cutter to shape). Spray the airfryer basket with oil, place the patties in the basket and cook for 20 minutes at 180°C (350°F), turning halfway through the cooking time.
  2. To make the meatballs, combine all the ingredients in a bowl. Form six balls and place in the airfryer basket. Cook for 10 minutes at 180°C (350°F), turning halfway through the cooking time.
  3. Serve the meatballs and rosti with the pasta sauce, heated if desired, and rice if using.

Tip
Serve this dish with a side of rice if you like.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
