Ingredients
4 large King Edward potatoes
salt and pepper
butter
Instructions
Wash the potatoes and spike them with a fork. Season generously with salt and pepper and wrap in aluminium foil.
Bake in the oven for 30 minutes at 250°C (or 230°C for fan forced).
Check the potatoes with a fork, and when they're ready the fork will slide in and out with no resistence.
Slice up and down and across in each potato without cutting all the way through, and serve with a knob of butter inside.
Cook's Notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
