Caipirinha

Caipirinha translates loosely to ‘little hillbilly’, and this popular cocktail is the archetype version of Brazil's rustic, refreshing batida-style cocktails. Mixing distinctive Brazilian spirit cachaça with zesty citrus creates a drink brimming with personality.

Ingredients

  • 5-6 lime chunks
  • 1 white sugar cube
  • 60 ml (2 oz) cachaça
  • 22 ml (¾ oz) simple syrup (see Note)

Instructions

  1. Muddle fruit and sugar syrup in a shaker, then add remaining ingredients and cracked ice. Shake briefly and empty into a frozen double rocks glass.
Note
To make simple syrup, combine one part caster sugar and one part hot water (i.e. same weight of each). Store in an airtight container in the fridge for up to 4 weeks.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
