Candied yams

Yams are not, in fact, the same as sweet potato, though the two are often confused. Many times in cooking, sweet potatoes are substituted for yams. In this very simple recipe, you can use sweet potato, or kumara.

Ingredients

  • 3 cups cooked mashed sweet potato or kumara
  • 110 g (1 cup) white or brown sugar
  • ½ tsp salt
  • 2 eggs
  • 40 g butter
  • 125 ml (½ cup) cup milk
  • 1 tsp vanilla essence
  • 1 tsp cinnamon
  • 1 cup raisins or sultanas
  • 1 cup chopped pecans
  • 1-2 packets marshmallows

Instructions

Preheat oven to 180°C. Grease a baking dish.

Combine all ingredients, except marshmallows. Transfer to prepared dish.

Scatter marshmallows on top. Bake for 35 minutes, taking care to keep an eye on it for the last 10 minutes to ensure it does not brown. If the marshmallows do not brown by 35 minutes, transfer to an overhead grill for 1-2 minutes. Take care to avoid burnt marshmallows.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
