Chocolate soil

A rose by any other name, right? Chocolate 'soil' just means chocolate crumble, but this nickname comes from its use as the 'ground' for many desserts. Sprinkle on a plate and top it with anything from panna cotta to a scoop of your favourite ice cream.

  • makes 2 cups serves

Ingredients

  • 140 g unsalted butter
  • 80 g caster (superfine) sugar
  • 200 g Dutch-process cocoa powder
  • 6 g salt (about 1 generous pinch)
  • 45 g egg whites

Resting time: 1 hour

You will need a silicone mat for this recipe.

Instructions

1. Mix all the ingredients together to a crumb-like texture in a food processor.

2. Spread the mixture onto a silicon mat and rest for one hour in the fridge.

3. Preheat oven to 165°C. Bake soil for 20 minutes, then remove and allow to cool at room temperature.

Cook’s Notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
