Domboy dumplings in syrup

Simple ingredients transformed into pillowy dumplings, drenched in a warm pool of butter-golden syrup sauce, are pure comfort for singer Christine Anu.

Ingredients

  • 2 cups self-raising flour
  • Plain flour, for dusting
  • Water, as needed
  • 4 tbsp golden syrup
  • 200 g butter

Instructions

  1. Mix flour and 1 cup of water together in a bowl to create a soft wet dough. Add more water as needed. Pour the wet dough onto a very well floured surface and knead for approximately 5 minutes till smooth. Add plain flour as needed to prevent sticking.
  2. Shape dough into small sausage-like shapes, and poach in boiling water till they float and are cooked through.
  3. Heat golden syrup in a pan. Once warm, stir in butter. Serve poured over warm domboys.

Note
Domboys, soft, fluffy dumplings made with flour and water, are a much-loved part of Torres Strait Islands food.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
