Easy chocolate modelling paste

It's time to get creative! Mix chocolate in a food processor until it becomes a pliable paste, then roll it like play dough to create chocolate twigs.

Ingredients

  • 300 g good quality dark chocolate (or dark chocolate buttons)

Instructions

1. Finely chop a block of dark chocolate and place it in a food processor. Mix until you achieve a smooth pliable paste. If creating a large volume of twigs, bring the chocolate to a crumb texture, remove it from the food processor and place small amounts at a time back into the food processor to bring to a paste.

2. Take small handfuls of the paste and roll it into different lengths to create stems and spikes. Twist the twigs before they fully set to give them some movement. Leave at room temperature to set.

Cook’s Notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
